Sunday Feast

Peace everybody. Here is a baked tofu kabob recipe to enjoy when the time & budget allows…


Ingredients:

Broccoli
mushrooms
Red onion
Tofu (extra firm)
Brown rice
Skewer sticks

Marinade Ingredients:

1 cup Braggs Liquid Aminos
1/3 teaspoons balsamic vinegar
3-4 teaspoons honey
2 chopped garlic cloves
2 tablespoons green tea leaves (2 tea bags)
1 quarter lemon squeezed

*Omit the honey for a vegan-friendly marinade.


Preparation:

Press the tofu so that it will absorb the marinade
Cube the tofu
Marinate tofu for 10 minutes
Chop the broccoli & onion to desired size
Marinate vegetables for 10 minutes
Put marinated ingredients on the skewer sticks and place in oven pan
Drizzle marinade over top
Bake at 350 for 30 minutes
Serve with rice
Optional: Pour remaining marinade over rice to taste
Feast!

JAHsun! - I would give it an 8.5. Wouldn't recommend pouring too much of the marinade over the rice tho as originally suggested. A little goes a long way on the rice. Peace.
