Oxalic Acid and Juicing
Oxalic acid is naturally found in some foods.
Oxalic acid combines with metals such as calcium in the body to form oxalate crystals which can irritate the gut and kidneys. The most common kind of kidney stone is made of calcium oxalate.
Since oxalic acid binds vital nutrients such as calcium, long–term consumption of foods high in oxalic acid can lead to nutrient deficiencies. Healthy individuals can safely consume such foods in moderation, but those with kidney disorders, gout, osteoporosis or rheumatoid arthritis are typically advised to avoid foods high in oxalic acid or oxalates.
Oxalic acid requires exercise for it to be metabolized. If you get too much oxalic acid, then your body will begin to actually loose nutrients.
If you or your family history indicates there is an increased risk of experiencing such health problems as mentioned above, then avoid juicing vegetables and fruits that are high in oxalic acid.
Even if there is no history or cause to be concerned about kidney stones, gout, osteoporosis or rheumatoid arthritis, you should still only juice vegetables and fruits that are high in oxalic acid only occasionally and in smaller amounts.
Foods that contain significant concentrations of oxalic acid include (in decreasing order):
- buckwheat
- star fruit (carambola)
- black pepper
- parsley
- poppy seed
- rhubarb
- spinach
- chard
- Beets and beet greens
- banana
- cocoa
- chocolate
- most nuts
- most berries
- and beans
In the case of rhubarb the only edible portion is the stalk because the root and leaves contain dangerously high concentrations of oxalic acid. Thus even dilute amounts of oxalic acid can readily "crack" the casein found in various dairy products.
Leaves of the tea plant (Camellia sinensis) are also known to contain among the greatest measured concentrations of oxalic acid relative to other plants. However the infusion beverage typically contains only low to moderate amounts of oxalic acid per serving, due to the small mass of leaves used for brewing.

The Benefits of Raw Coconut Oil
What it is
How it Works (if you don’t care, skip down to the benefits)
To comprehend why coconut oil is so beneficial, it's useful to understand what MCFA’s are. Firstly, fats are chains of carbon atoms (of varying lengths) surrounded by various quantities of hydrogen. The arrangement of hydrogen around a carbon chain determines its saturation. The more hydrogen, the more saturation, and the more stable the molecule. The length of the carbon chain in a given fat determines many of its properties (including how long it takes to digest it). Coconut oil is a highly saturated fat consisting primarily of MCFA's of 8 to 12 carbon atoms in length (for comparison, the saturated fatty acids in meats range from 14 to 24 carbon atoms in length). The shorter a particular MCFA chain, the less energy and enzymes required for the body to digest it. Therefore, coconut oil provides minimal strain on the body's digestive energy. [*By the way, don’t believe the hype about saturated fats being bad for you and raising your cholesterol/clogging arteries. In reality, studies show that arterial plaque is 75% cooked unsaturated fat and foreign cholesterol derived from eating animal products . . . not all saturated fat is bad for you -- generally just the fat from animal sources.]
Benefits . . .
Improving Digestion
Since coconut oil can be emulsified in digestion without burdening the liver or gallbladder, it provides energy more quickly than other fat sources. Therefore, people who suffer from poor digestion, especially liver and gallbladder trouble, would benefit from switching to coconut oil in cooking, and even from eating coconut oil straight up (the recommended daily intake is 1 to 4 tablespoons).
Enhancing Immunity
The particular MCFA's in coconut oil (caprylic acid, capric acid, lauric acid, and mystristic acid) are known to help the body’s defenses. All of these demonstrate amazing anti-viral, anti-microbial, and anti-fungal properties (lauric acid has the greatest anti viral, and caprylic acid has the highest yeast-fighting power). The way that coconut oil fights off viruses and bacteria is basically by confusing them (their harmful microbes become unable to determine the location of their membranes in the presence of coconut oil…they then spill their genetic contents and become easy prey for your white blood cells to take them out).
Lowering Cholesterol
Coconut oil contains no cholesterol, and actually helps to lower cholesterol (it even outperforms cold-pressed olive oil in this category). The cholesterol-lowering properties of coconut oil are a direct result of its ability to stimulate thyroid function. In this regard, it also helps to prevent heart disease, obesity, cancer and other diseases associated with degeneration.
Normalization of Blood Sugar
Shifting to coconut oil from other oils normalizes blood sugar levels. In this way such a shift can be helpful to persons with diabetic concerns. Click here for more info on how to use it with a view toward this purpose.
Curing Skin Deficiencies
Because the oil's antioxidant properties prevent destructive free-radical formation, coconut oil is also highly beneficial to the skin. When applied topically, it prevents and gets rid of acne, helps to get rid of dead skin, and gives skin a healthful glow. It also helps to keep connective tissues strong to prevent sagging and wrinkles.
Selection, Storage, and Cooking…
It goes without saying that 100% raw organic coconut oil is the one you should use. It's best to select oil that’s packaged in a dark-colored container or other container that doesn’t allow light to get into it. You can keep it in the fridge to keep it from melting if your house is warm (in its oiliest form coconut oil it’s hard to manage and you might end up using more than necessary-- and it’s not cheap stuff). However, it remains stable at room temperature for up to 2 years so this is a matter of personal preference. As far as cooking goes, vegans can use coconut oil as a direct substitute for butter in most baking recipes. It's also a great option if you must use oil in stovetop cooking, as its smoke emission level is above 170 degrees (much higher than other oils).
Is Soy Healthy?
A couple years ago someone mentioned to me that companies use soy as a key bonding agent in plastic. Soybeans have natural characteristics that make them ideal for making plastics. The polymers in soybean protein closely mimic the desirable properties in petroleum-based plastics. Joshua Otaigbe, an Iowa State University scientist, proved this a few years back. For many vegetarians, soy has been a substitute for meat in many dishes, but there are so many biological reasons why soy should not be eaten on a regular basis if at all.
A good cue for the aspring vegan/vegetarian in my opinion is that if you see an overabundance of soy based brands in Whole Foods, its probably funded by THE POWERS THAT BE. This means that there is ticket to profit. This means that the product you desire most is being mass marketed and most likely the quality of that product has been reduced to nil. So how does one get to the truth when it comes to soy? Usually, the first question I ask is… "Where is the money? Who has something to be gained from one side or the other?" With the soy issue, there does not seem to be an easy answer here either… and that's because there appear to be strong financial incentives on both sides of the argument.
Who has something to gain from the consumption of soy? Perhaps companies like Monsanto which produce the genetically modified soybean seeds. Perhaps companies like Cargill Foods or SoyLife which produce countless soy-based foods. Or soybean councils in several states which represent farmers who grow this new, emerging bumper crop. And, of course, all of the companies which are constructing factories all over the world to do the processing which is necessary to make soybeans edible.
Soy is not the health food that you think it is.
From tofu and tacos to baby formula and burgers, soy products have swept the nation as a healthy source of protein, with a reputation for being all natural and good for you. New studies have however raised questions over whether the ingredients in soy might increase the risk of breast cancer in some women, affect brain function in men and lead to hidden developmental ab-normalities in infants.
Soy and hormonal balance
Just because tofu is of vegetable origin does not necessarily make it healthy.
Health-conscious Americans believe in the benefits of tofu, infant formula and other food products made from soybeans and soy extract. But their assumption is now being called into question by Jill Schneider, associate professor of biological sciences at Lehigh University in Bethlehem, Pennsylvania.
In a study of hamsters completed under Schneider's direction, it was recently found that a component of soy beans - isoflavones - significantly accelerated the onset of puberty in the rodents.
These findings, which are similar to the results reported by labs which have experimented with rats, might be relevant to humans, Schneider says. She points out that many babies who are allergic to cow's milk are fed soy-based formulas which contain isoflavones. Isoflavones, she says, can act like estrogen, a natural hormone important in the development of both male and female humans.
It is child abuse to feed a baby soy formula. A baby fed soy will receive, through the phytoestrogens, the equivalent of approximately 5 birth control pills per day! The damage is incalculable.
There are other reasons to stay away from soy
A very large percentage of soy - over 90% - is genetically modified and it also has one of the highest percentages contamination by pesticides of any of the foods we eat.
Soy processors have worked hard to get these anti-nutrients out of the finished product, particularly soy protein isolate (SPI) which is the key ingredient in most soy foods which imitate meat and dairy products, including baby formulas and some brands of soy milk.

Vegan Flax Seed Crackers>>>
Thanks Tarica for the recipe book. These are sooooo good...Makes 12 4inch crackers
1/3 Cup Chopped Red Bell Pepper
1/3 Cup Fresh Cilantro, Chopped
2/3 Cup Sun - Dried Tomatoes
1 1/4 Cups Diced Tomatoes
1 Teaspoon Minced Jalapeno
1 Tablespoon Minced Garlic
1/4 Cup Namu Shoyu or 1 teaspoon Celtic Sea Salt
How to:
Place bell peppers, cilantro, sun dried tomato, tomatoes, jalapeno, garlic, olive oil, and Nama Shoyu or Celtic sea salt into food processor (or blender) and puree. Transfer contents into a large bowl and mix in the flax seeds. Spread flax seed mixture onto oiled solid dehydrator sheet. See...this is why you need a dehydrator. Dehydrate at 90 degrees Fahrenheit for 4 hours or when top is dry, cut then into desired shapes and transfer them onto mesh dehydrating rack. Dehydrate until crackers are crisp, about 5 hours.

Centrifugal Juicers Versus Masticating Juicers
When it comes to juicing, there are basically two types of juice machines that are available for you to choose from.
You can choose from centrifugal juice machines or masticating juicers.
Centrifugal Juicers
Centrifugal means moving or directed away from a center or axis.
A centrifugal juicer is the most common type of juicer you see in stores and on TV. A centrifugal juicer spins at high speeds and during the spinning motion, the vegetables that you have shoved down the chute are ground to a pulp. The spinning motion then forces the juice away from the pulp. The juice then pours into a bowl.
Masticating Juicers
Masticating means to chew, to grind or knead into a pulp.
Your teeth are an excellent example of mastication in action. Your teeth chew and grind food. After you swallow, the food then goes to your digestive system which, through the process of digestion, begins to extract the juice from the food you eat.
Much in the same way, a masticating juicer grinds vegetables and literally squishes out the juice. Since a masticating juicer works at low speeds and with no spinning action, it tends to juice many vegetables more efficiently.
The Difference Between A Centrifugal Juicer and a Masticating Juicer
The difference between a centrifugal juicer and a masticating juicer is like night and day. Centrifugal juicers work at high speeds, tend to be noisy and while a centrifugal juicer may be able to juice the rind of a pineapple more efficiently, in most situations, the low speed action of a masticating juicer allows you to juice more vegetables with greater efficiency. A masticating juicer tends to be a lot more quiet, less messy and easier to clean.
A masticating juicer is especially good at juicing the very important green leafy vegetables such as wheatgrass, spinach, parsley, cilantro, kale, Swiss Chard, etc. While a centrifugal juicer can juice green leafy vegetables, the centrifugal juicer is nowhere near as efficient as a masticating juicer in this regard.
Some say the high speed action of a centrifugal juicer produces too much heat which then can damage or possibly kill the enzymes in the juice. While I can neither confirm nor deny this statement, one thing is for sure, a masticating juicer definitely does not create the friction that a centrifugal juicer will create.
One significant benefit of a masticating juicer is that it requires less vegetables, in many situations, to create more juice. As a result, you spend less on vegetables than you would with a centrifugal juicer.
It's also worth noting that a masticating juicer is much more versatile, in many regards, compared to a centrifugal juicer. Since a masticating juicer squeeze the items you put into it, you can also use a masticating juicer to make baby food, fresh pasta, grind meat and to make nut butter.

Sometimes, Endives are listed as "Escarole" in stores. Choose small leaves. As with dandelion leaves, the bigger the leaf, the more bitter the taste.
Important
Due to the fact that Endive is a green juice, you will find it beneficial to have no more than about ¼ of your juice consisting of green juice.
Endive is very concentrated and so I try not use to any more than 1 ounce in every 8 ounce glass.

Solar Decathlon Houses in Washington DC?
I was down on the "Mall" in Washington DC the other day and noticed this. Twenty teams of students from international universities competed to design and build solar-powered houses, which were subsequently constructed and exhibited at the National Mall in Washington, D.C.If you are in DC it might be worth your time to see what the future "may" hold. Its raining a lot this week in DC so there isn't a lot of solar energy available :(
I am all for new ways to increase awareness and activism in this global crisis but as usual I have to question everything. The department of energy must be giving money away and it makes me wonder why people are still living without heat or lights in the land of the free.... More HERE
What Exactly is Saturated Fat???
Saturated fat" is a chemical term that many people have mistakenly come to equate with meats and animal products. However, the relationship between saturated fat and food is not nearly this simple, nor is the relationship between saturated fat and health.
Virtually all fat-containing foods contain some saturated fat. There's about 1.25 grams of saturated fat in every tablespoon of flaxseed oil (about 9% of it's total fat), and in every tablespoon of olive oil, you'll find about 2 grams of saturated fat (or about 14% of its total fat). While the relatively small amount of saturated fat content of these foods is seldom placed in the spotlight, it is a natural part of their composition and their health-supportive properties. Very lean meats, like trimmed eye of round steak, will also contain about 2 grams of saturated fat per 4-ounce serving, and skinned baked chicken breast will contain just over 1 gram in this same amount. These very small amounts of saturated fat are amounts that most of us could easily include in our Healthiest Way of Eating and are amounts I consider to be both healthy and necessary.
The health risks associated with saturated fat all involve excessive consumption. Saturated fats are considered "bad" for us because in the U.S. we tend to consume them to excess, and this excess intake is associated with health problems. Excessive intake of saturated fat is the main dietary cause of high blood cholesterol in both men and women, and it may also increase the risk of both prostate cancer and Parkinson's disease in men. The National Academy of Sciences has not set a daily limit for saturated fat intake and simply recommends eating as little saturated fat as possible while still consuming an adequate amount of other nutrients.
Organizations like the American Heart Association recommend that you keep your saturated fat intake under 7% of total calories. If you eat 2,000 calories per day, that recommendation means 140 or fewer calories from saturated fat, or about 15.5 grams.
To reach an excessive level of saturated fat, what kinds of food would you need to consume? An egg, cheese and bacon croissant would typically provide you with more than 15 grams of saturated fat and put you at or above the recommended limit. So would a 6-ounce serving of broiled filet mignon steak. You would also be over the limit with four 8-ounce glasses of whole milk, and you would be pretty close with two tablespoons of butter.
